Directions

  1. Peal the skin off the potatoes. Cut them in bite-sized pieces. Let them sit in water to remove harshness. Heat the potatoes for 2 minutes at 600W microwave so that they turn soft. Mash the potatoes with fork.
  2. Bring the vegan soft to room temperature. Mix the vegan soft and maple syrup in a bowl. Mix well.
  3. In a separate bowl, whisk the rice flour and salt. Add the potatoes and vegan soft with syrup to the bowl. Mix with a spatula to make one big ball.
  4. Roll the potato mix with a rolling pin to about 7mm thickness. Use a cookie cutter to make cookies. Spread them on a pan with a cooking sheet.
  5. Bake for 12-15 minutes at 180℃. When baked, sprinkle cinnamon sugar on top.
