Directions
- Cut avocado in halves. Remove the seed and put the fruit in a bowl. Save the avocado skins.
- Cut red pepper into cubes. Drain the corn.
- Add 2 and chickpea into the bowl to mix. Salt and pepper to taste.
- Place 3 to avocado skin. Put vegan shred on top and bake in a toaster oven for about 5 minutes.
